I’m 60 years old and this diet has given me back my sight, eliminated fat from my liver and cleansed my colon.

Beets are one of the rare plants that contain  betalains  , a family of pigments responsible for their intense color. For eye health, beet greens are particularly valuable: they are rich in  lutein  and  zeaxanthin  , two carotenoids that protect against age-related macular degeneration and retinitis pigmentosa.

Beets are also an excellent source of vitamins  A, C, E, K, B1, B2, B5, B6,  and  B9  , as well as minerals such as  copper, iron, and manganese  . Regular consumption can improve cardiovascular health, stimulate blood circulation, and increase energy levels.

One of the best ways to enjoy the health benefits of beets is to combine them with other fresh ingredients in a tasty salad.

Beetroot Salad Recipe

Ingredients:

  • 2 onions

  • 2–3 beets

  • Vinegar

  • Salt, to taste

  • 1 tablespoon extra virgin olive oil

Preparation:

  1. Peel the beets and boil them in lightly salted water until tender.

  2. Dice the beets and place them in a bowl.

  3. Chop the onions and add them to the beets.

  4. Drizzle with olive oil and vinegar, then season with salt.

  5. For maximum flavor, let the salad rest for about 1 hour before serving.

Note:  Eating beets regularly can improve vision, aid liver detoxification, and promote colon health. You may notice a change in the color of your urine or stool after eating beets: this is completely normal and simply due to the natural pigments, which are absorbed by the intestines without being broken down.
